The H21 runs a dedicated 15-bar coffee pump for extraction and a separate 5-bar steam pump — both independent, both simultaneous. Add PID temperature control, a real-time pressure gauge, and full stainless steel construction, and you have café-grade output at home. It's built for people who take espresso seriously.
On most home machines one pump handles both extraction and steam — pressure fluctuates when switching. The H21's dedicated coffee pump holds consistent pressure throughout the shot, while the independent steam pump powers the wand at full capacity at the same time. More stable crema, better shot consistency, true simultaneous brew and steam.
Very fine. Target 25–30 seconds for a 1:2 ratio (18g coffee → 36g yield). Go finer if the shot is sour and fast; coarser if bitter and slow. Adjust one step at a time and pull a fresh shot after each change.
PID keeps the boiler within ±1°C of your set temperature. For espresso, 90–96°C is typical — darker roasts extract well at lower temperatures (88–92°C), lighter roasts at higher (93–96°C). Let the machine complete a full heat-up cycle before your first shot, then adjust by 1°C at a time based on taste.
After each session: purge and wipe the steam wand, rinse the portafilter, run a blank shot. Backflush with a portafilter cleaning tablet weekly. Descale every 2–3 months with a commercial descaler when prompted. Use filtered water. Wipe the stainless steel exterior with a damp cloth.
